Sylvia of Sylvia’s Enchilada Kitchen on the art of making meatless enchiladas
HOUSTON… The Queen is back!
Where most queens have throne rooms, Houston’s Enchilada Queen has a kitchen, and beginning Feb. 20, she will be holding court in hers for all food lovers as a new year of cooking classes begin. The 2021 kick-off is a timely one.
Those who practice Lent between Ash Wednesday, Feb. 16, and Easter Sunday, April 4, know it means sacrifice and doing without some of the things we love to eat and drink.
That makes it a great time to get a little creative.
For those forsaking meat on Fridays, that’s the lesson Sylvia’s Enchilada Kitchens’ owner Sylvia Casares will be teaching Saturday, Feb. 20 when she shows several great ways to make meatless enchiladas.
From 1-4 p.m. Saturday, Feb. 20, Sylvia will be rolling tortillas in showing attendees how to make a trio of delicious enchiladas with no meat. The class will have everyone learning how to make Crystal City Enchiladas using spinach, Enchiladas Morelia with salsa roja and queso fresco and Enchiladas Sarita with squash. As part of the class, everyone will also learn the secrets of Sylvia’s Texas Two Step – not a dance but a creative way to prepare tortillas before rolling.

Note, due to safety measures the restaurant is taking due the pandemic, space for classes are very limited and social distancing is enforced. Masks are required for entering, leaving or moving about in the restaurant.
