Back In The Tamale Classroom With Sylvia Casares

HOUSTON… In the history of Tex-Mex food, many, many of the dishes so associated with it can be traced back to families of settlers in this rough and rugged new land not just making do with what was available, but making something delicious out of it.
Such is the case of the ancient tamale, a Christmas tradition in these parts, and such is the case of finding normalcy in these pandemic times.
That’s the motivation leading Sylvia’s Enchilada Kitchens’ owner Sylvia Casares to carefully opening up her restaurant classroom for in-house learning in time for the scaled-back holiday celebrations.
On Saturday, Dec. 19, a very limited number of students will be able to join her at the Eldridge location to tackle the whole ancient art of making pork and chicken tamales, right down to wrapping them in corn husks and steaming them. The three-hour class concludes with everyone sitting down to eat – socially distanced, of course.
The class is limited to no more than a dozen people, who, unless they are already living together, will be safely distanced in the classroom. Masks will be required.

Not comfortable venturing out? On Wednesday, Dec. 23, she’s going to host a seasonal Tamalada party, the centuries-old tradition of making a party out of making tamales, but now with the magic of technology – namely Zoom – at homes across the state.
From 2 to 4:30 p.m., Sylvia will be hosting the party from her own kitchen and showing everyone the ancient art of making tamales. Participants have several options for joining. Pay $65, and Sylvia’s will provide everything that’s needed to make a dozen tamales, plus directions and information on all the utensils needed to make them. The kits can be picked up any time before 3 p.m. Tuesday, Dec. 22 from the Sylvia’s location on Eldridge only (the kits are NOT available at the Woodway location). Then, at 2, the party begins at homes across the region.
