A New Houston Coffee Shop is Soon Opening in Montrose

A new locally owned and operated specialty coffee shop is coming to 1000 West Gray. Husband and wife duo Becca and Douglas Roses are opening Della Coffee Company on Wednesday, April 17. They aim to create a space in the historic Montrose neighborhood that reflects their love for coffee and community and will highlight locally-owned suppliers. 

The Roses met and fell in love while working in the hospitality industry. Becca, a Houston native, began her journey in the hospitality sector at the University of Houston’s Conrad N. Hilton College of Global Hospitality Leadership, where she majored in Hotel and Restaurant Management. Also a clean living and epigenetics coach, Becca added that her “own personal health journey led me to venture into wellness as a career and marry my passions for wellness, hospitality and food.”

Douglas is originally from Portland, Oregon, and has a background in the restaurant business, specifically focusing on opening restaurants and multi-unit leadership.

Della will feature a curated selection of beans from local roaster Tenfold Coffee Company, with espresso pulled from a La Marzocco GB5 Espresso Machine, and a premium tea selection from Rishi Tea & Botanicals. Guests can expect all of their favorite espresso-based drinks such as flat whites, lattes, cortados and macchiatos, in addition to drip coffee, smooth, rich cold brew and specialty drinks such as matcha, chai, mocha and vanilla lattes. Other available coffee preparation methods include AeroPress, French press and Chemex pours, which employ a coarse grind, similar to what’s used in a French press. The thicker filter offers a nuanced and complex coffee experience that is lighter than your standard coffee pot. 

The shop brings in milk from McGregor, Texas-based Mill-King Market & Creamery, and for non-dairy options, it will have oat milk and a variety of nut milks made in-house.

Della Coffee will also operate a full kitchen, led by chef-partner Cesar Jovel, which will offer breakfast tacos, soup and hot sandos as well as a selection of pastries such as pistachio chocolate chip cookies, croissants and brownies, and grab-and-go options like chia pudding, yogurt and granola, overnight oats and cold sandos. It will be partnering with local vendors and suppliers whenever possible. This currently includes Houston’s own Breadman Baking Co. and Force of Nature Meats in Fredericksburg.

As for the name, Becca explained it is “a symbol of heritage and love, named after our daughter.” She added, “In a more literal sense, ‘Della’ means ‘of the,’ or ‘from the’ embodying the essence and spirit of who we are — a place that is of the community, of quality, and of unparalleled hospitality. Our vision for Della blends a fresh, fun, and vibrant atmosphere with classic charm, designed to appeal to everyone. We’ve created a space that combines modern design with traditional elements, ensuring a welcoming vibe for all.”

The shop will have indoor seating, with several small tables and bar stools overlooking the street, nestled in a bright, cozy space. The aesthetic approach is described as “ a fresh, fun and vibrant atmosphere with classic charm, designed to appeal to everyone. We’ve created a space that combines modern design with traditional elements, ensuring a welcoming vibe for all.”

It ties into the brand, with Becca adding that “at Della, we offer more than just coffee. It’s an experience. From our carefully selected decor to our community events, every aspect is curated to make Della a place for connection, conversation and enjoying high-quality coffee and bites in a comfortable setting.”

“Coffee is a huge part of both of our lives from an early age. Doug had grown up around an immersion of coffee culture in Portland and some of my earliest memories include sharing coffee with my grandmother. Both of us find that coffee is a ritual that brings people together from all backgrounds.”
