Chef Ryan Hildebrand’s FM Kitchen And Bar To Open This Month

Park-like, vibrant and pretty, chef Ryan Hildebrand’s FM Kitchen and Bar (1112 Shepherd, 832-804-6006) is finally set to open on May 19. It’s a welcome return of the former executive chef of Triniti. The “FM” in the new restaurant name stands for “Farm to Market.”

Hildebrand has been refining the long-awaited laid-back concept for years. In fact, the classic FM Burger he’ll be serving was tested and available several months at Triniti before it closed. Hildebrand hopes FM Kitchen and Bar will be a neighborhood destination for residents of the Washington/Shepherd corridor. The built from-the-ground-up venue features a green space and game area (ping pong, corn hole, bocce), where pooches are welcome. Erin Hicks created the interior design.

Food and drink-wise, expect fresh, Texas-road-trip-inspired fare that goes beyond burgers, including a shrimp and avocado campechana, Frito pie, Cobb salad, chicken-fried steak and lemon-thyme brick chicken.

To drink, look for a variety of craft beer, including local, domestic and a few imports. The bar also plans to serve a selection of wine ($7 per glass, $25 per bottle), as well as signature and standard cocktails.

Hildebrand promises fancy milkshakes, too.  These will be upscale versions of classic vanilla, chocolate and strawberry shakes. FM Kitchen will also serve personal-size pies.

Murals by Houston street artist Daniel Anguilu provides both a showcase for his work and nod to the tradition of graffiti art of the site (the former Alva Graphics location). Anguilu will work as a curator to bring in the work of other artists on rotating basis. FM also plans to host live bands and DJs on a regular basis with the help of Wonky Power, a music agency and record label. Parking is available onsite and there are bike racks on the premises as well.

It sounds like locals have plenty of great sights, sounds, smells, tastes to look forward to when FM Kitchen swings open its doors in a few weeks.
